Going Bananas

We harvested this bunch of bananas at Blue Morpho a couple weeks ago. They have been ripening in a plastic bag on our porch.  Most of them are finally ready to eat.  We ate our first this morning for breakfast.  The taste was wonderful and much more complex than what I was expecting.  An unusual sort of sweet and sour as if I had sprinkled very tiny amounts of nutmeg and cinnamon on the banana. The flavor unfolded in my mouth like a complex curry or good TV mini-series.

Over the next week I look forward to blending and baking these bananas of ours and rediscovering the essence of this wonderful tropical fruit.
